Nutritious Veggie Wrap
This is a perfect way to clean out your fridge:
Roast any kind of vegetables you have
Add a protein such as eggs, beans or smoked tofu
Add a sauce: hummus, tahin sauce, garlic yoghurt sauce, spicy sauce (exp. Sriracha)
Add any kind or fresh herb and/or nuts
place in the middle of a (whole grain) wrap
Fold over
Eat
Happy
Ingredients :
Red pepper*
Pumpkin
Leek
Red onion
Aubergine
Spinach
Cherry tomatoes
Small can of white beans (I used half a can for 1 wrap)
Handful of fresh herbs (parsley, dill, cilantro, basil, …)
Handful of grated cheese (optional)
Greek yoghurt
Garlic powder
Sriracha
Peper & salt
*I used these vegetables but you can use any kind you have!
Directions:
Cut all the veggies roughly into pieces. Add olive oil, salt, pepper and other spices (as you wish) such as cumin seeds, coriander, garlic powder, smoked paprika, …
On 180°C, roast your aubergine, pumpkin, leek & red onion. After 10 minutes add the red pepper. Roast for another 10 minutes or until soft and a few starts to brown.
Stove some spinach, season and set aside.
For 1 wrap: Mix a good handful of the roasted veggies with the white beans, a few cherry tomatoes & fresh herbs.
Time to assemble: Arrange the veg-mixture in the middle of the wrap, cover with yogurt sauce, Sriracha & spinach. Add some seeds/nuts, grated cheese if you like.
Fold your left & right side of the wrap a bit over the stuffing. bring the bottom side over the filling (while still holding the 2 sides) & roll over holding tight.
Place in the oven (180°c) for 5 minutes.
