Red Plum Compote
This multifunctional red plume compote can be used for all your daily food preppings! If you are in need of a fancy morning breakfast, this red plum compote matches perfect with natural (Greek) yoghurt, fresh fruits and granola. For lunch, you can combine it with ricotta or fresh cheese, grilled nuts and honey to make your boring bread-break a hit wonder. It can finish all kind of desserts like puddings, pie, ice cream, pancakes or even chocolate mousse.
This recipe is with red plums because of the season. But peaches, nectarine or mixed red fruits also work well with these ingredients. Try to use ripe fruit, this really makes the difference for the end result.
Ingredients (for 1 jar +/- 600g)
500 g red plums
170 g granulated sugar
1 cinnamon stick (+ 1 teaspoon grounded)
5 cardamom pods
1 star anise
1 tablespoon of granulated cloves (or 2 cloves)
1 orange (peel and flesh)
Directions:
Cut your ripe fruit in small cubes and put them in a small saucepan.
Add your sugar, spices, peel of the orange and bring the fruit to boil on a medium heat.
Reduce to medium-low heat and let it simmer for 10-15 minutes. Use a wooden spoon to mash the fruit.
Add your orange juice and let it cool down to room temperature.
Don’t forget to remove the spices before transferring to a clean jar.
